It is full of creaminess and flavour, thanks to the quality of the old variety chickpeas, delicately accompanied by a touch of lemon, ginger and Espelette pepper!
The chickpeas used for this recipe are old peas known as population peas. They are selected at the farm, from the harvest, multiplied and resown year after year. They are grown in varieties associated with camelina, mustard or phacelia to maintain the balance of the soil and the ecosystem.
When opening, mix well, and add a little olive oil if necessary to dilute it.
